Can I do both on one day?
No. Both start early and take most of the day. Book them on two consecutive days, and avoid scheduling either on the day you arrive from Phnom Penh.
Which one is more likely to show me animals?
The elephants range over a large forest area, but each walk is guided to where they are, so seeing them is very likely. The gibbons are wild, though habituated to people, so sightings are likely but not guaranteed.
